Pumpkin Bread 2 cups canned pumpkin ~a large can of pumpkin is a bit more then two cups but that is what I usually use, I dump the whole thing in 3&1/2 cups flour 2 tsp soda 1&1/2 tsp salt 1 tsp pumpkin pie spice ( you can add more to taste) 3 cups sugar 2/3 cup water 1 cup oil 4 eggs optional use any or all! *one 12 oz pkg chocolate chips *one cup chopped nuts *3/4 cup raisins Dump everything in a bowl. You don't need to dry sift the ingredients or anything like that. Mix together. This is not a recipe you have to be careful not to over beat. Add optional ingredients at the end after everything else is mixed. Pour into pans that have been greased and floured. Fill about 1/2 to 3/4 full. Bake at 350 until they pass the toothpick test, approx one hour. You can also top with a mix of cinnamon and sugar if you like. Cool in the pan for about 10 min and finish cooling on cooling racks.

A co-worker at work made pumpkin butter it was delicious! I will have to find the recipe or ask her.

Yum, that sounds good! I really love pumpkin. It's going to be one of my favorite ingredients. Mostly because I love it, but also because it is such a moist ingredient so it's really hard to dry the bread out.
